Ratatouille for dinner

A healthy, cheap and delicious meal for dinner is my new recommendation for you, in case you are looking for a light and tasty dinner option.

I did google a recipe and all of them look different. I did imagine I will prepare this perfectly sized slices of vegetables but the truth is you work with what you find in the supermarket 🙂

Ingredients:

  • red pepers, 2 pcs;
  • 3 big tomatoes;
  • garlic;
  • 3 big onions;
  • basil;
  • olive oil;
  • mozzarela, 1 pcs for the ratatouille and 2 for the salads;
  • 1 zucchini;
  • 1 eggplant ( aubergine )
  • pepper and salt.

For the bed ( or sause ) you need to cut into small pieces 1 red pepper, 3 big tomatoes ( ideally slightly boiled in hot water prior that to take off the skin ); 2 well-cut onions and garlic. Add salt and pepper to that and put on a pan covered with olive oil. The veggies need to steam for 10-15 mins. They need to be soft and  still fresh looking. Onc you achieve this consistency you can use a mixer or blender to mixx it all together.

In the end you put it all in a tray for baking.

This is basically the juice of the mean you prepare. After that you need to cut 2 onon, 1 red pepper, the eggplant and zucchini and mozarela into slices. Arrange them in circle or as you wish.

I have covered the veggies with basil, olive oil, salt and pepper. When you are done, you need to cover the tray with a folie. TIP – if you use a ceramic tray like me, you need to place it in a cool oven. The direct contact with a heated over might cause it to break. Heat it for 30 mins and check on it every 15 minutes.

Meanwhile you can use the rest of the tomatoes and mozzarela for the started. I prepared a Carpese salad.

I prepared also zucchini filled with cream cheese and bruschetas with basil.

While you have enjoyed your starters, the Ratatouille should be ready. Turn off the over and take off the folie. Place some more mozzarela or yellow cheese on top and leave another 50-10 minutes in while the oven is still warm.

The result it juicy and tasty vegetarian meal! Please note that this is a 4 portions serving.
